Handful of Broccoli

30 Vegetables in 30 Days

My Mom is coming to visit any minute, so I'm keeping things simple on Day 1 of the Veggie Challenge. Oven roasted broccoli is one of the easiest sides that will be eaten happily by the whole family. No excuses here...the broccoli is washed and prepped, all I have to do is add oil and seasoning and pop it in the oven. Here goes...

Oven Roasted Broccoli
3 or 4 servings

Preheat the oven to 400 degrees.

Cut any giant florets you see in half. Evenly sized pieces cook at the same rate.

Toss broccoli florets with 1-2 Tablespoons of avocado oil and a little salt and pepper.* Spread out in a single layer on a rimmed baking sheet.*

Place in oven. Check progress in about 20 minutes.

You know when these bright green unopened flowers are done when they are tender-crisp, slightly sweet, and a bit crispy around the edges.

A tasty veggie side is on the table, and I didn't even break a sweat. I call that success!

*Chef tips:

  • garlic salt + lemon pepper, everything but the bagel seasoning, and kelp delight seasoning are some tasty alternatives to salt & pepper.
  • the more room the broccoli florets have "to breathe" on the sheet pan, the crisper they become. Crowded broccoli will steam instead of dry roast.
